Chickpea Tuna Sandwich

The old favorites that make you feel good. A good old tuna sandwich. This mock tuna can be eaten with chips, crackers or on a sandwich with vegan bread. The brand of breads I like are Daves's Killer Bread 21 Whole Grains and Seed, and Ezekiel 4:9 Sesame, Ezekiel 4:9 Sprouted Grain. You can find these options in the freezer section of your grocery store. 

1 can chickpeas                                                    add in variations:
2 tbsp of veganaise                                                   1/2 green apple
1/2 celery stalk                                                       1tsp Dill seasoning
salt/pepper to taste                                                 1tsp seaweed flakes 
1tps yellow mustard                                               1tsp spicy mustard 
1/2 tbsp relish
1 tsp turmeric



Rinse and drain the chickpeas. 

Put chickpeas in blender and pulse twice.

Just enough to break peas apart, it should not be smooth or creamy.

Slice the celery. Add all ingredients into a bowl and stir with fork.


Enjoy on a sandwich with spinach and tomato, or use as a dip with crackers. 
You can add vegan cheese, toast the bread or put in oven with vegan cheese on top for a tuna melt. 


Skillet melt: add slice of bread to skillet with vegan butter top with cheese, put tuna on cheese, cheese on top of tuna, then add the other slice on top. Cook till golden brown, flip and cook the other side till golden brown. Plate, cut in half and serve.

Quick and easy to prepare 5-10 minutes.
